Humber’s Baking and Pastry Arts Management diploma program, taught in our state-of-the-art baking and pastry labs, is designed to propel you into a career in the baking and pastry industry. Learn how to make impressive confectionery creations such as:

You will gain hands-on experience working in various settings, individually and as a team member, creating baking and pastry delicacies. The first year of the program consists of foundational courses while in second year, you begin in-depth training in baking and pastry arts. You will learn the foundation of traditional and contemporary techniques in baking and pastry arts management exploring measurements, safety and sanitation, and various types of dough. As well, you’ll study the emerging opportunities of this specialized field, international trends and applications used in the industry. Areas of study in the program also include courses in business and career management, entrepreneurship, and computer applications for the food-service industry, as well as general education and communications courses. Our seven on-campus kitchen labs comprise the most modern facilities in the world. Among them are the award-winning culinary demonstration theatre and kitchen lab, induction cooking labs with high-tech exhaust and theatre-style seating and cooking demonstration area.

Qualified students will complete an unpaid work placement in the baking and pastry industry in the Greater Toronto Area for seven weeks in the fourth semester (40 hours per week). Students will also be able to apply for placements across Canada and Europe, which have jump-started many successful careers.

The Artificial Intelligence with Machine Learning Ontario Graduate Certificate was developed to fill the need for a growing and in-demand skillset. Work Placement

  • You will get hands-on experience as a fitness professional through two unpaid work placements, one per semester in your second year of study.
  • Your first work placement takes place on campus where you will perform fitness appraisals and conduct weekly personal training sessions for an assigned client as part of the Humber Centre for Healthy Living (CHL). Along with personal training, students also provide fitness and exercise tips as content for the Humber CHL website.
  • Your second work placement takes place off campus, two days per week for 14 weeks (196 hours total) at a fitness facility in a municipal, commercial, private or corporate setting.

Humber’s Culinary Management diploma program teaches you the skills you need to excel as a chef in the culinary industry. This program will also prepare you to to design, organize, implement, serve and execute your own dinner event in the “Chef's Table” course. Using a market-related themed menu, mise en place and à la carte cooking, students will showcase classical and contemporary techniques and skill. The Charcuterie and Advanced Garde Manger courses involve students using contemporary level food presentation, styling techniques and becoming proficient with various butchery processes on a wide range of meats. The Emerging Trends course is unique among Ontario colleges, providing students with the opportunity to work alongside local guest chefs. Note: A fast-track program is implemented for the January start. The first semester (January to April) is immediately followed by the second semester (May to August), resulting in a short summer break. Humber’s Paralegal graduate certificate program prepares you for an exciting career in the legal field. You will gain skills in legal research, oral and written advocacy, critical thinking and problem solving through a case-based and problem-based learning environment. You will develop your oral advocacy skills through active learning including presentations and mock trials.

Courses include tort and contract law, residential landlord and tenant law, employment law, small claims court, provincial offences and summary convictions, and administrative tribunal law and procedures. Advanced Diploma in Traditional Chinese Medicine Practitioner

Humber’s Traditional Chinese Medicine (TCM) Practitioner advanced diploma program is the first and only publicly funded program of its kind offered at a postsecondary institution in Canada. This intensive program is grounded in the TCM Practitioner skillset which has been approved by all provincial TCM regulators in Canada and provides students with the skills and professional experience necessary to become a TCM Practitioner in Ontario. Through a combination of theoretical course-based instruction, as well as several clinical placements, you will gain a necessary understanding of Traditional Chinese and Western medicine practices. Moreover, graduates of the TCM Practitioner program will be trained to conduct a TCM diagnosis and develop appropriate treatment plans by utilizing their skills in acupuncture, herbal medicine, clinical practice management, professionalism and safety. This program is also committed to the promotion of evidence-informed practice of TCM through scientific research.

Learning Outcomes
Upon successful completion of the program, a graduate will:

  • Critically analyze and evaluate Traditional Chinese Medicine Practitioner (TCMP) theories and treatment methods to develop professional knowledge and skills required for the profession.

  • There are seven mandatory clinical placements that provide students with progressive, professional practice experience in diagnosing, preparing treatment plans, inter-professional collaboration and safe practices. Clinical placements occur throughout the year at community TCM and multi-discipline clinics within the greater Toronto area, as well as at our on-site partner clinic, the Tzu Chi Clinic of Traditional Chinese Medicine. The clinical component of the program offers more than 800 hours of direct patient contact, which exceeds the regulatory body minimum requirement of 500 hours.

Graduate Certificate in Regulatory Affairs

Humber’s Regulatory Affairs graduate certificate program focuses on developing the concepts, skills and techniques required to work in regulatory affairs in the pharmaceutical, medical device or biotechnology industries. You will gain knowledge of the regulatory system, legislation, procedures and practices which relate to the development, manufacture, quality assurance and marketing of health-related products. 

The importance of internationally harmonized regulations and future trends in the industry will be examined by analyzing relevant international and Canadian legislation and regulations. You will study a wide range of regulations and standards including good manufacturing practices, good laboratory practices, good clinical practices, good documentation practices, the International Organization for Standardization (ISO), the Canadian Food and Drugs Act, the Environmental Protection Act, principles of regulatory compliance and inspections, drug establishment licensing, and related standards and guidelines. Teamwork and communication skills are emphasized and you will acquire information technology skills that assist communication and data management specific to regulatory affairs.

You will become familiar with the steps necessary for product submission; how to assemble documents and statistical evidence; the complexity of product registration, negotiation and follow-up; and how these are linked to the federal government and provincial formularies.

Following two academic course-based semesters, students complete a three-month placement that provides opportunities to apply and integrate theoretical knowledge and skills into real-world work settings. Most placements are in the following sectors: pharmaceutical, biotechnology, medical device organizations, government agencies or food industries.
