Beyond the first-year level there are courses in every important field of French language and literature, from the Middle Ages to the present day, including the literature of French Canada, French-speaking African countries and translation techniques. France, Quebec French-speaking African cinema are also taught and the department has specialists in these areas. Each year a number of visiting distinguished scholars give lectures on their special interest, and in some cases, conduct seminars for senior students.

English Literature courses cover literature from the medieval period to the present and provide instruction in theoretical approaches and critical methods. The program not only introduces students to an array of literary genres but also develops their creative and interpretive capabilities. The aim is to provide comprehensive historical coverage, to expand students' writing skills, and to promote the kind of analysis and argumentation that enables them to express their ideas clearly and effectively. The program also offers courses in Creative Writing.

Entrepreneurship is about creating value through identifying opportunities and gathering and managing resources to capitalize on those opportunities.

Students in the Entrepreneurship/Small Business major explore new venture startups, social initiatives, small business management and family business.

Students will encounter questions including:

• What is creativity and how does it relate to entrepreneurship?
• What is opportunity and how do businesses start in response to perceived opportunities?
• How does family involvement impact the business and family?
   

Environmental Science examines the physical, chemical, and biological components of the Earth’s environment, its diverse systems, and the complex ways in which they interact. Environmental scientists use a variety of scientific and analytical techniques to measure environmental parameters, to evaluate the state of environmental systems, and to project the changes in environmental systems as a result of human activities and climate change. Natural and physical systems behavior is key to evaluating the implications of human activities such as agriculture, industry, and resource extraction, processing, and use. Environmental problems such as contamination and pollution, global warming, and biodiversity loss are studied with regard to past, present, and future practices and solutions.

Chemistry is the science concerned with the properties of atoms and molecules, of which all matter is composed. Chemistry is important for all aspects of the material world - food production; the manufacture of medicines, textiles, and plastics; energy production; identifying environmental problems and remedies; and understanding the workings of living organisms. 

Bachelor of Arts - Canadian Studies is an interdisciplinary program that allows students to study Canada from a full range of disciplinary perspectives. It examines both the past and the present from political, economic, social and cultural disciplinary perspectives. Courses that focus on Canada in the Faculty of Arts are drawn from Anthropology, Economics, English, French, History, Icelandic, Labour Studies, Political Studies, Religion, Slavic Studies and Sociology. In addition, certain courses in other faculties including Art History and Geography and Environment, are also available form Canadian Studies credit.

The Art History program offers students an opportunity to consider, in a cultural context, both Western and non-Western artistic traditions with an emphasis on the former from the Renaissance to the present. While all courses acknowledge methodological issues, the program also offers courses in art theory and criticism at the second and third-year levels. Students enrolled in this program broaden their knowledge of art production with studio electives.

The BFA Honours degree allows you to complete an additional year of study including art history and optional studio electives.

The Global Political Economy program is a unique interdisciplinary approach for the study of international political, social, environmental, and economic issues. It brings together faculty and course offerings across five disciplines to give you a superb education in global political economic relations, and their effects on local communities. The program integrates courses in Political Studies, Economics, Sociology, Anthropology, and History, and for Advanced degree students, two core courses in Global Political Economy.

The Human Nutritional Sciences program includes foundation courses in basic sciences, fundamental courses in metabolic and applied nutrition, and applied courses in food utilization and management with an overall emphasis in human nutrition in any of the options that are available. Students will master key competencies in specializations in nutrition, foods or the food industry. All students receive a solid theoretical foundation in both food and nutritional sciences. Topics of study include energy and exercise, nutrients and nutritional supplements, food labels and health claims, diet and disease prevention, nutrient metabolism and disease states, nutrient requirements and diet evaluation, nutrition education and dietary change, and food quality and ingredient technology.
